Rustic Summer Fruit Tart

Last night while watching TV, I got the urge for something sweet.  I always keep on hand a bag or two of TootsieRollPops, but somehow they weren’t doing it for me.  I didn’t want something sweet; I wanted dessert.  I was watching MasterChef at the time, and it came to me that I could make like a wannabe-contestant and whip up a dessert from what I had on hand.    The Mystery Box I imagined Gordon Ramsey created just for me contained:  blueberries, a nectarine, a plum and one Pillsbury Refrigerated Pie Crust.

I unrolled the pie crust onto a cookie sheet covered with parchment paper.  I washed the blueberries, did a rough chop of the nectarine and plum and mixed the fruit together.  To that I added about 1/4 C of sugar, 1T flour, grated lemon peel, a tsp of lemon juice, chopped basil, Himalayan salt and about 1T of a 4 pepper mix I have in a grinder. I mixed it all together and let it sit for a little while (well, the program was on and I had to keep watching!).  During a commercial break, I spread the fruit mixture on the pie crust and folded the edges up, pleating it as needed.  I brushed an egg white on the crust, dumped more sugar on that and put the whole thing in the oven at 375 for about 40 minutes or until the crust is nicely browned.  And here’s what I got:

It satisfied my every craving, both for dessert and to play in the kitchen.  The fresh ground pepper gave the tart an edge and the basil added a another taste element.  This was definitely a winner!

    Jane- LT and I landed on HSN on a night Emeril was there (LT’s cooking idol) He was selling this little pie/tart maker– needless to say since it arrived her– it has been going nonstop. I love small cooked desserts that I don’t have to share :-)
